So Very Strawberry White Chocolate Bars

Being that it’s Valentine’s day, it seems ever-so-fitting that I shared my super simple recipe for the most lushous, ooey gooey bars filled with white chocolate chunks and sprinkled with sweet strawberries.

So, let’s skip pass the sweet nothings and get right to business, shall we?

You’ll Need This…

1/2 cup coconut sugar
1/4 cup turbinado raw cane sugar
4 tbsp coconut oil
1 egg
1 tsp vanilla extract
3/4 c whole wheat pastry flour
1/4 tsp baking powder
4 oz white chocolate
1/2 cup freeze-dried strawberries
&
baking receptacle
parchment paper

Now, Do This…

Preheat oven to 350ºF

Start by combining the oil, sugars, egg and vanilla into a medium-sized bowl and mix them together until thoroughly combined.

Add the flour and baking soda to the wet mixture and combine.

Now, just fold in the white chocolate chunks and freeze-dried strawberries into the mixture and viola! You’re mixture is done.

Why freeze-dried strawberries, you say?

Well, because fresh strawberries tend to hold a lot of water and can make your bars quite soggy. So, your best bet to ensure only the very best bars is by using freeze-dried fruit.

P.S. I bought mine at Trader Joe’s.

Evenly spread your mixture into a parchment lined or well-greased baking receptacle.

Bake for 18-20 minutes or until a toothpick comes out clean when you pierce the center.

Unfortunately, you’re going to have to let them cool for at least 15 minutes before attempting to cut or handle the bars, otherwise they will be too gooey.

But it’ll be worth the wait, promise!
