Holy Stuffed Chocolate Chip Cookies, Batman!

These cookies are not for the faint hearted. They mean serious business. They’re rich, decadent, overflowing with chocolatey goodness and are absolutely ginormous. It can pretty much cover the entirety of my face and is almost impossible to finish in one sitting– Almost, being the keyword here.

So, if you’re looking for the ultimate sweet treat guaranteed to satisfy even the biggest sweet tooth, you have come to the right post my friends! Now, without further ado…

You’ll Need This…

¼ cup coconut oil
¾ cup unsalted butter
½ cup evaporated cane juice sugar
½ cup turbinado raw cane sugar
2 eggs
1 tbsp vanilla paste
2 cups whole wheat pastry flour
1 tsp baking soda
¼ tsp sea salt
¾ cup semi-sweet chocolate chips
¾ cup milk chocolate chips
12 sandwich cookies

Now, Do This…

Preheat oven to 350ºF
Cream together butter, coconut oil and sugars until light and fluffy.

Add the eggs and vanilla paste to the mixture and combine. Let’s call this your wet ingredients.

In a separate bowl, whisk together the flour, baking soda and salt. Now, we shall call this your dry ingredients.

So, now get your fancy pants on… and add your dry ingredients into your wet ingredients and whiz it all up.

Fold in the chocolate. I used both semi-sweet and milk chocolate because I like a bit of variety, but use whichever chocolate your heart desires.

Place 2 tbsp of prepared cookie dough batter onto a lined baking sheet about 3 inches apart. The cookies spread quite a bit during baking.

Then, place a sandwich cookie on top of your prepared cookie dough batter and gently pressed down. You can use Classic Oreos or Golden Oreos, and I’m pretty sure the Birthday Cake Oreos would be pretty epic in this recipe, but I went with the 365 mix & match cookie sandwiches because you get the best of both worlds, minus the birthday cake… which is kind of a bummer, but still awesome nonetheless.

Now, you want to top the sandwich cookie with an additional 2 tbsp of prepared cookie dough batter. Yes, these cookies will be massive. No, I do not think they should be smaller. I mean, why be subtle?

Ever so gently, pat down the prepared cookie dough so that its firmly attached to the sandwich cookie. Now say, “Good cookie. Now stay.” This usually coaxes the prepared cookie dough not to slide off the sandwich cookie during the baking process, but it’s completely optional.

Bake the cookies for 13-18 minutes or until lightly browned.

Let the cookies rest on a cooling rack for 10-15 minutes because at this point the chocolate in your cookies are like molten lava and will burn you. I speak from experience. Sad, but true.

And that’s it! Gadzooks… that’s a mighty fine cookie, if I do say so myself.

Just make sure to grab a glass of milk or almond milk, whichever your preference may be, to accompany your enormous cookie. Trust me, you’ll need it.
