Everyone’s Favorite Chip Accessory, Guacamole.

guac1

What can I say? Even my best friend, who happens to dislike avocados, will eat guacamole. That is how strong the guacamole force is.

I’m not saying I’m a guacamole expert, nor is this an authentic recipe, but it works.

With that being said, I am giving you my clandestine, superbly yummy guacamole recipe. It’s been in the works for years. Two years to be exact. Now finally, I can present to you the best guacamole I have ever tasted and hopefully you think its pretty darn spectacular too.

You’ll Need This…
Guac2.5

4 avocados
2 cloves of garlic
1 shallot
1 jalapeño
2 tbsp fresh cilantro
½ tsp garlic powder
¼ tsp fresh ground pepper
pinch of sea salt
3 tbsp salsa
½ lime, juiced

Now, Do This…
guac4

Start by chopping the garlic, shallot, jalapeño and cilantro. This is the most tedious part. Make sure to remove the seeds from the jalapeño and discard. Also, I suggest taking the cilantro leaves off the stem before chopping. The stem is a bit too stringy for my liking, so I usually don’t add them to my guacamole. But hey! Its your guacamole, so you do what you want with those stems.

Scoop out the avocado pulp and place it into a bowl. Just make sure its a big enough bowl to mix everything together. I somehow overlooked that, hence I had to use bigger bowl to mix everything together (see photo below).

Add garlic, shallot, jalapeño, cilantro, garlic powder, pepper and salt to the avocado mixture.

Carefully blend the ingredients together, because blending with reckless abandon can lead to avocados flying out of your bowl. This has happened. You have been warned.

To blend, you can use a potato masher, fork, food processor or in my case, a pastry blender. Which I think gives you the best result, but to each their own. Use what’s in arm’s distance.

Fold in the salsa and lime juice to mixture and POW! you’re done.
Serves 8-10 relatively hungry people. Give it a whirl.
